Physicochemical properties : white or yellowish brown powder. Yeast extract, a zinc containing enzyme. Its molecule consists of two subunits, one of which is located in the active center of the enzyme and the other plays a role in stabilizing the quaternary structure. Suitable for conventional determination of β-NAD, β-NADH, ethanol and acetaldehyde.
Purpose: Biochemical research. In the presence of coketone I, it catalyzes the dehydrogenation of some primary or secondary alcohols, aldehydes and ketones, including ethanol. The dehydrogenation rate of n-butyraldehyde, cinnamaldehyde and benzaldehyde is higher than that of acetaldehyde. The removed hydrogen is accepted by nad to become reduced coenzyme I. In the process of alcohol production by yeast fermentation, the last reaction is catalyzed by this enzyme to reduce acetaldehyde to ethanol.
