Definition of activity: 1 g alkaline protease powder can hydrolyze casein at pH 10 and 40 ℃ to produce 1 μg tyrosine per minute, which is defined as an enzyme activity unit.
Application conditions: substrate concentration 10 ~ 25%, temperature 20 ~ 60 ℃, pH value 8.0 ~ 12.0, reaction time 3 ~ 6 hours (can be long or short according to requirements), and enzyme 0.03 ~ 0.06% (based on the weight of hydrolysis solution) is added according to the reference dosage.
Physicochemical properties: Light yellow powder or gray smooth particles.It is a protein hydrolase and belongs to a serine fragile high alkaline protease. The main component is subtilisin, which is an endonuclease and the catalytic site is serine.
Purpose: Biochemical research.It can hydrolyze protein molecular peptide chain to produce polypeptide or amino acid, and has strong ability to decompose protein.
