Physicochemical properties: powder or suspension. It exists in legumes such as alfalfa, pea, lentil and potato, but the activity is the strongest in soybean. The isoelectric point of lipoxygenase crystallized from soybean is 5.4. The optimum pH cannot be simply determined, but is determined by the solubility of the substrate, generally ph6 0 ~ 3.0, and the optimum temperature is 20 ~ 30 ℃.
Purpose: biochemical research. Lipoxygenase can catalyze molecular oxygen to oxidize oil with glutaric 1,4 double bond to form hydroperoxide. Hydroperoxide oxidizes the sulfhydryl (- SH) of protein molecules to form disulfide bonds (- S-S -) and can induce protein molecules to polymerize, making protein molecules larger.
