Physicochemical properties: light beige to light brown powder, no odor, soluble in 20 times water, viscous liquid, and negatively charged hydrophilic particles, acidic. It is hygroscopic and insoluble in ethanol, dilute acid and other organic solvents. The addition of sugar and acid becomes a gel semi-solid gel. Pectin is the general term of a class of polysaccharides. According to the composition of pectin, there are two types of homogeneous polysaccharides and heteropolysaccharides: homogeneous polysaccharide pectin, such as d-galactan, L-arabinose and D-galacturonic acid glycan; Heteropoly candy gum is the most common, which is composed of galacturonic acid glycan, galactan and Arabian in different proportions. It is usually called pectinic acid.
