Physicochemical properties: white crystalline powder, a derivative of mannose whose hydroxyl at position 6 is replaced by hydrogen, namely 6-deoxy-l-mannose. It is soluble in water and methanol, slightly soluble in ethanol, and its crystallization takes two forms, α Type and β Type. α Type A contains a molecule of crystal water. After heating, it loses crystal water and turns into β Type (molecular weight: 164.16); β Type A is easily hygroscopic, and changes into α Type. Common ones are α- L-rhamnose, sweet, exists in the form of pyran in aqueous solution. It is reductive. It is oxidized with bromine water to form rhamnoic acid, and then oxidized with nitric acid to form l-arabinoxygeranic acid. Rhamnol was obtained by reduction with sodium amalgam. Its sweetness is 33% of sucrose
