Physicochemical properties: white to almost white crystalline powder or hexagonal flake crystal. It tastes sweet, sweeter than lactose, but not as sweet as sucrose. Hydrolysis in acid produces galactose and fructose. Solubility in water (w/w):76.4% at 30 ℃; 81% at 60 ℃; >86% at 90 ℃. It has variable rotation and is stable after 24 hours.
Purpose: biochemical research. It is used as an indirect nutritional supplement in industry.
